About Yellow
Yellow summer squash is zucchini's color-variant sibling — same species, different cultivar. The flavor is essentially identical to zucchini with marginal differences (some claim slightly sweeter and milder; in blind tastings the difference is barely detectable). The two common shapes are crookneck (curved end, traditional Southern variety) and straightneck (uniform shape, modern American supermarket standard). Yellow summer squash and zucchini are functionally interchangeable in nearly all recipes; their joint presence is often for visual contrast. Southern American cuisine has a stronger tradition of yellow squash than zucchini (squash casserole, fried squash); Italian-influenced cooking favors zucchini.
